Sunday is Mother's Day. It is a day to celebrate all mums in the world.
This week I thought we could look at Mother's Day as a day to say thanks to all of those who have looked after us during the lockdown. A way to celebrate not only mums, but dads, aunties, uncles, step parents, caregivers and whanau.
A time to celebrate the family and say thanks before we hopefully head into Level 2. A thank you day. A great way to say thank you is through food. Brunch is still out of the question with cafes and restaurants still closed, however brunch can be done at home just as easy!
Some of my favourite brunch meals are:
There are many - get on to google or the old fashioned way - a recipe book at home if these are not for you.
You could cook lunch or dinner as well. It is the thought that counts. I have attached a great lasagne recipe that I make with students at school. Anchovies are optional. I like to add grated portobello mushrooms and use a can of cherry tomatoes instead of normal chopped tomatoes.
Thanks to all mums, mother figures and all those parents, caregivers and whanau.
